Mushroom stew

I plan my dinners mostly around the seasons so I have made a lot of stews and curries lately. Unfortunately after a couple of very cold days the Cape Town weather turned to summer again, so I did not feel comfortable posting recipes that is supposed to be eaten in colder weather. I can however no longer wait to share this mushroom stew recipe with you.

This is a great vegetarian dish that can be served with any type of starch you like!

Old-fashioned stuffed mushrooms

Stuffed mushrooms were a hit in the eighties and I made it often as a starter. Both my daughters adore mushrooms so I made these stuffed mushrooms for the first time in years in December 2012. I was quite surprised -no shocked when they asked me to make those old-fashioned mushrooms again! I thought old-fashioned only applies to things that happened in my Mother’s youth! Well, I must admit that they are really old-school.

Stuffed mushrooms are a great starter to serve at a braai, since you do not really need a plate. The mushroom is the plate for this delicious filling and you only need one free hand, so your other hand is still available for a drink of your choice!

It is Monday and time for some vegetarian fare. Mushrooms are so healthy, delicious and versatile and a good replacement for meat.

This dish is very quick to prepare and I have used a frozen corn and pea mixture, but you can use fresh peas on its own if you like.

Beef fillet with red peppercorns and mushrooms

I love fillet steak, but it is very expensive. In Cape Town you can easily pay R200 per kilogram. If you have a family like mine who eats large portions of meat, it becomes very expensive to buy beef fillet.

I went to Malmesbury, recently, to fetch my son’s ID book and one of the butcheries was selling beef fillet for less than half the price that we pay in Cape Town. Of course I had to stock up.

Some people say that fillet is tasteless, but I love it. My favourite way of cooking fillet can be found here or try this beef fillet and radicchio salad.

I just love the simplicity of this recipe! Just remember that red peppercorns are very hot!

Kingklip with a mushroom crust for Father’s Day

Although I love kingklip, I do not buy it often since it is on SASSI’s orange list, meaning that the species are depleted, either due to over fishing or the way the fish has been caught. For more information about Kingklip on SASSI’s list, go here.

It used to be one of my most favourite orders in Restaurants and preferred fish for home cooking. Lately I only eat it on special occasions and Father’s day is such an occasion.

Mushroom Pot Pies for Meatless Mondays

The girls and I went to the Stellenbosch Fresh Goods Market on Saturday. This is one of our favourite places to go to for breakfast or lunch on a Saturday.

Since BG wrote exam until 12:00, we went there for lunch. The girls both had “bockwurst on a brotchen”. I was torn between a wonderful mushroom kebab, with a variety of exotic mushrooms or mussels. In the end I decided to go for the mussels and it was a great choice! I got seven plumb mussels steamed in garlic, butter and basil and served with bruschetta and a tomato relish for R25! 

I could, however not stop thinking about the mushrooms and went to Woolworths yesterday to get some exotic mushrooms, which I haven’t eaten since December last year. I was very surprised to see that Woolworths are still selling 2 punnets (400g) of exotic mushrooms at R30.00! This is really a bargain. The mixture contains a combination of fresh shiitake, portabello, king oyster and shimeji mushrooms.

The pot pies are easy to prepare and take less than 30 minutes. It serves 2 people as a main meal or 4 people as a side dish.

Something old, something new

View from the side’s weekend theme is “something old, something new”. 

Since I had some very strange new visitors to my garden lately, I decided to do a post on mushrooms. 

My something old is two mushroom recipes, that I blogged about a long time ago. The first one is a mushroom soup and you can find the recipe here!

My something new is photos of strange mushrooms that were in my garden recently. We have an area under one specific tree where there are always mushrooms growing. They look like white and brown large mushrooms, similar to the brown mushrooms that can be bought at any greengrocer.

These ones are however totally different. This beautiful one was growing in my garden about a month ago:

and in the end they look quite awful and colour everything around them black:

I have never seen mushrooms like these ones but find it quite intriguing. If you have any information about them please let me know.

Mushroom and lemon risotto for meatless Mondays

I have made Risotto before, without much success. At one stage I really thought that making risotto is way too much effort and I could not understand the hype surrounding this! Well, that was until I have recently eaten a vegetarian risotto at the River Garden restaurant at Lourensford

The risotto was extremely nice and I decided I just have to master this. I have tried a couple of times before mine tasted almost as good. I have realized that making risotto is like learning to ride a bicycle. It takes some time and practice but once you have mastered the technique it is quite an easy thing to do. 

I think the most important thing to remember when making risotto is that you have to use the correct type of rice; Arborio rice is perfect. The next important thing is that it needs your full attention and you must stir and add liquid all the time!

Vegetarian Wreath for Meatless Mondays!

A couple of friends came over for a braai this past weekend. I never know what to make as a starter when I am having braai!

Our local Fruit and Veg sold their mushrooms (white button and large brown) for R10 a punnet recently. I got somewhat carried away and bought way to much!!

With the mushrooms, some sweet peppers and basil pesto from the Pesto Princess in the fridge I thought these colours are shouting for something festive!! Wow, and the creation was a hit! I don’t think I have ever received so many compliments for any dish before!! :)

I served this as a starter but it will be just as good as a side dish or as a vegetarian main dish. Be careful when you remove it from the baking tin to ensure that it does not fell apart!!
