Chicken with oranges and red onions

Every now and again the grey winter days in Cape Town can get the better of me. When I feel all grey and down I normally buy some bright flowers to cheer me up! Sometimes, however, I cook something colourful.

I made this chicken with oranges and red onions on a very grey day. I was going to cook some chicken and then I saw the bright orange oranges and decided it would go well with the red onions, so this dish was born.

My family loved the chicken dish and I could only keep a little to take photos the next day!

Boerewors and Corn muffins

I made these boerewors and corn muffins on a Saturday morning for breakfast with some left over boerewors of the braai we had the night before! Next time I am going to experiment with chorizo or pork bangers as the surprise in these muffins.

My family loved these, especially the boerewors surprise! They said it is like boerewors and pap in a muffin!

Mushroom stew

I plan my dinners mostly around the seasons so I have made a lot of stews and curries lately. Unfortunately after a couple of very cold days the Cape Town weather turned to summer again, so I did not feel comfortable posting recipes that is supposed to be eaten in colder weather. I can however no longer wait to share this mushroom stew recipe with you.

This is a great vegetarian dish that can be served with any type of starch you like!

PinkPolkaDot’s hotdogs

Most of you know that I have three children so I am not ashamed to tell you that I have made quite a few hotdogs in my life. My children forever wanted to invite friends over for sleepovers and making a dozen or two hotdogs are quick and easy and luckily most children loves hotdogs.

I believe every person should have a good hotdog “recipe” for those days that you are really feeling uninspired to make lunch or supper. These hotdogs also provides a good excuse to drink a beer or two!

Old-fashioned stuffed mushrooms

Stuffed mushrooms were a hit in the eighties and I made it often as a starter. Both my daughters adore mushrooms so I made these stuffed mushrooms for the first time in years in December 2012. I was quite surprised -no shocked when they asked me to make those old-fashioned mushrooms again! I thought old-fashioned only applies to things that happened in my Mother’s youth! Well, I must admit that they are really old-school.

Stuffed mushrooms are a great starter to serve at a braai, since you do not really need a plate. The mushroom is the plate for this delicious filling and you only need one free hand, so your other hand is still available for a drink of your choice!

Seafood Potjie

I love summer and enjoy the extra sunlight a lot. It is so nice to go for long walks before or after work whilst the sun is shining or simply working in the garden whilst it is still light.

Of course what I enjoy most is cooking and eating outside. This potjie was done on the fire but you can also make it inside on the stove.

Old Fashioned Venison Pie

My Mother’s venison pie was the best in the world, so when one of Hubby’s friends recently gave him some springbok meat, I immediately start searching for my Mother’s recipe.

I could unfortunately not find her recipe, but found a recipe by Carmen Niehaus that sounded close to my Mother’s recipe. I adapted this recipe to make my Mother’s old fashioned venison pie and this was the best venison pie that I have ever tasted!

Yoghurt Cake

My sister mailed this recipe for a four minute cheese cake, containing only three ingredients to me a couple of weeks ago. There was no cheese to be seen in the ingredient list so I renamed it to a Yoghurt cake.

I was very curious to make it but my husband does not eat yoghurt and my two children who are at home do not enjoy cheesecake. I decided to make this as a treat for BG’s housemates on our visit to her, one Sunday.

The five of us, each had a small piece before we were going to leave the rest to her and her housemates, but o my word, it was absolutely delicious! My husband, children and I loved it. Neatless to say not much was left for the poor housemates!

I still can not believe that anything containing only three ingredients and which is so easy and quick to make can be as delicious!

Chicken and Mango salad

For me summer would not be the same without mangoes. I adore this wonderful versatile fruit and luckily it is available in South Africa from Decemeber to April.

Not only do I love to eat a mango as is but I also enjoy experimenting with it in all kinds of dishes as you will see with the mango ice cream I made recently and this mango mousse.
