Sweet-potato Bread
August 19, 2012 in Bake, Bread
I love bread; even as a kid I wanted bread for breakfast, no porridge or cereal for me, I was very happy to have a piece of toast with anchovy spread (we called it fish spread) or marmite on it, and a cup of coffee, not many things have changed since then, I still prefer bread for breakfast, and I still love to have bread as a side dish with my food, and as so many of my best love dishes goes with sweet potato, and with bread, I thought why not combine them, and bake a sweet potato bread.
Ingredients:
125ml butter
½ cup sugar
2 eggs
2 cups Flour
2 tsp baking powder
5ml salt
500g cooked and mashed sweet potato.
Recipe:
Pre-heat the oven to 180°C and grease small bread tin. Mix butter and sugar together and beat until creamy. Add eggs and beat well. Add all the dry ingredients and add to egg mixture. Add the mashed sweet potato and mix very well.
Bake for an hour in pre-heated oven. Let it cool down for a while before cutting.
Spread with butter and enjoy.
Bon appetite
