Quick and easy bean soup
My problem with cooking bean soup with dried beans is that my craving for soup is like bad weather in Cape Town. It is just there all of a sudden without any warning, so soaking beans overnight does not do the trick for me, but I still want bean soup, especially in this cold weather we had over the last couple of days.
So I figured, the beans in cans is all ready soft, if I use that together with the liquid it is in, I can get the bean taste in a fraction of the time it will take to cook traditional bean soup, and believe me, it does work, try it you will make it again and again.
You will see I use the rind of the parmesan cheese in the soup, it is a trick I picked up watching (too much) food TV, it is a great way to get the taste in the soup with something you might have otherwise through away.
