Fruity, Boozy Christmas Cake made in the microwave

Would you believe that we are less than 6 weeks away from Christmas? I know the decorations have been up in the malls since the end of September but I can’t help but feel that it has snuck up on me again. So, there is only one thing to do this weekend and that is to make some Christmas cake. Why 6 weeks before you ask? Well because I believe that Christmas cake must be boozy and this leaves just enough time (and I’m cutting it a little fine here) to have a brandy soaked tea time treat by December 25th.
I can’t remember where I found this recipe but I do remember that I found it because my oven was out of action for about 3 months (over the kids birthdays I might add – I know, I don’t know how I coped) and it was absolutely necessary to find a solution to the problem.

Christmas always sneaks up on me, as well. The last 3 months of very year just passes so quickly!! Yummy cake!! Enjoy the weekend! (I cannot leave a message on your other blog, for some or the other reason!)

Thank you Inge. I also love it because it only uses 250g of fruit cake mix (which is so expensive lately). I really can’t afford to make huge batches of fruit cake where I need 1kg or more of fruit
