A quick and easy recipe for chocolate cupcakes that gives you a place to hide more veggies from your children and have them licking their lips without realizing that they are actually eating beetroot.

This recipe was originally published in the Hummingbird Bakery recipe book “Cake Days” but I have simplified the method so much it is even quicker and easier to make. So easy in fact that I actually put the batter together in a blender
