Lemony Roast Courgette & Chickpea Salad

This is a great quick-fix little number, and if you’re anything like me then you almost always have a can of chickpeas gathering dust in the pantry cupboard. Not because they’re unloved in our house, just because there’s always something fresher with a shorter shelf-life that demands to be cooked and eaten as a matter of great urgency of course. Like this Summery Panzanella Salad, with fresh home-grown basil and tomatoes; or these Quick Clementine Sponge Puddings. Whatever the reasons for any perceived procrastination, I’m very glad that I did finally get round to making this again. It’s a very hearty accompaniment to (dare I say it) a ready-roasted store bought chicken, or quick flash-fried chicken breasts, although that said it more than holds its own as a delicious Meat Free Monday hero too. Baby Spinach, Pea & Chorizo Salad

This salad is quick quick and oh so pretty. I love the punchiness of the colours, and the smoky-spiciness of the chorizo with the burst of freshness from the greens gives it perfect balance. A little meal in itself, or serve over cous cous or even pasta, or inside warm crispy pitas. You could also add in some crumblings of feta, goats cheese or even ricotta.

Grilled Red-Pepper Pesto Chicken Strips with Barley & Herb Salad

This isn’t necessarily a ‘knock your socks off’ kind of meal, it’s not necessarily going to be something that you suddenly want to eat for breakfast, lunch and dinner every day, but it’s beautiful in its simplicity, unassuming and un-fussy, and packs a generous punch in the flavour department, so what’s not to love? Roast Duck and Spiced Plum Salad

We spent part of our honeymoon in Paris, almost entirely for the duck. We found one restaurant, Scossa (see, I still remember over 5 years later) who made such incredible duck that we went back and ordered it three times in one week. So you see, I like my duck.

It’s not often that we find it in the average South African supermarket, so I was quacking happy to see some up for grabs the other day (I know). And this was not just any duck, but ‘happy, free-range duck. Double yay. Read the rest of this entry →

Beef Fillet and Warm Beetroot Salad

If you’re going to throw a meal together effortlessly, it’s always a bonus if it has both prettiness and punch and belies the fact that the output exponentially exceeded the input. This far from fussy beef fillet and warm beetroot salad is the antithesis of high maintenance food and it’s definitely worth a go asap. I like to think that the key that unlocks the door to the real ooh la la is the horseradish.
