I Love Lemons (aka “Easy Peasy Lemon Squeezy”)

I love lemons – they taste of summer – all sour and fresh and fragrant. Last night I decided I want an Italian-esque hit of lemony love. We have a lemon tree in the garden which is most generous with her gifts of the yellow and green fruits … and we have a healthy bushel of thyme growing near the swimming pool. Plus I had some left over dregs of white wine and a sip of sparkling wine gone flat.
The flavours mingled in my mind … and I decided I just HAD to make some Lemon Thyme Chicken pasta.

Ingredients
I used a pack of 4 chicken breast which I diced and then added to a pan with some oil that had been heating up with a teaspoon of dried “Italian herbs”. (I like letting the herbs warm up first to release their aroma’s.)
I have this fab little gadget that my momsie pie gave me which I use to zest lemons … it results in these wonderful curls of zest.

Lemon zest curls
After browning the meat, I added a sprinkling of the lemon zest and fresh thyme – letting the oils infuse with the chicken for a minute.
Next add the juice of one lemon, 1 and 1/2 cups of white wine and 2 tablespoons of sugar.
Bring to the boil and allow to bubble away for 5 minutes.
I used a heaped teaspoon of maizena (mixing it with some cold water first) and then added that to thicken the sauce. Simmer on a low heat and allow to reduce and thicken.

Bubble bubble toil and trouble …
Cook your pasta (according to packet instructions) and add the sauce and chicken - letting it coat the pasta. Add salt and pepper to taste.
Serve with lashing of parmigiano and some torn basil.

Don’t you just find it so difficult looking at all these pics of food just before supper time! I’ve been reading the blogs now … and I’m about to race off and find lunch – my brain has told my tummy that we need some food … pronto!
