Easy pleasy Mac and Cheese

Hello everybody,

I hope that the weekend was good :) mine was super awesome and super cold but on the plus side at least my baby is feeling stacks better!

This is a delightfully yummy macaroni cheese that actually represents a marriage of Jamie and Nigella. I was looking for a lighter (and easier) version of the traditional macaroni and cheese recipe. A quick search on both my favourite foodie websites led to a bit of adding and subtracting and eventually led to my own version so here goes:


Macaroni Cheese:

Boil a good quality macaroni/ penne in salted water until al dente. Reserve some of the cooking liquid.

Heat  some butter in a pan and add a good handful of thyme or basil.

Allow the butter to get frothy and the herbs to get fragrant before adding the pasta.

Add a little of the cooking liquid to the pan and give the pasta a good stir so all the flavours are incorporated.

Open a can of evaporated milk and beat in 4 large eggs.

Grate some nutmeg into the egg mixture and add salt and pepper to taste

At this stage I added some grated mozarella and gouda into the pasta

Tip the pasta into a casserole

Top with some more cheese

Sprinkle herb of your choice

Bake until bubbly and lightly browned on top

  1. This looks good and cheesy!! I use 2 versions for mac&cheese, the easy one – just mixed with a cheese sauce (cheesy bechamel) or the eggy one ( eggs with milk), which takes to long to make.. hehe :) But Im liking this – ideal milk – imagine nice and creamy!!

  3. Hey S- I used to use the previous version with the cheese sauce however Ive been left with a floury goo of late so decided to go a bit different. Loved the lightness of this version. x

  4. It was lovely! And I think the nutmeg gives it that hmmm factor ;)
