Date and Yoghurt Dessert (for iftaar)

Hey everyone,
Apologies for the slight absence, I was having PC problems that eventually got sorted out in the form of an early birthday present from the husband.
We are currently in our 13th day of fasting for the month of Ramadhaan time seems to be really flying by…. I am still going to be sharing Ramadhaan/Iftaar inspired recipes with you all.
At this time of year every Muslim household has an abundance of dates:
Dates are very rich in fibre, fat and proteins. They also contain sodium, potassium, calcium, magnesium, iron, sulphur, phosphorus and chlorine, as well as vitamins A, beta-carotene, B1, B2, B3 and B6 (for more on the spiritual and health benefits of dates click here
I made a quick and easy dessert for iftaar the other night with some dates- light, cooling and refreshing- give it a go:
Youghurt and Date Dessert:
- Dates
- Thick Greek yoghurt
- Pistachios
- Rose syrup
- Elachi
Roughly chop up about 4 dates per portion of dessert – I used the majdoul variety
Heat 1 tbl of ghee in a frying pan gently saute the dates on low heat until they soften up nicely. Be careful they don’t burn or catch
Add the pistachios to the date mixture
Layer in fancy glasses with the yoghurt
Finish of with a some more pistachio nuts and a drizzle of rose syrup

Variations:
This dessert is not extremely sweet if you prefer a sweeter version you can replace the Greek yoghurt with a flavoured yoghurt of your choice (vanilla yoghurt should work nicely)
I had leftovers so all I did was chuck them all into the blender added a bit of milk and ice cream and a pinch of elachi- it turned out to be an amazing smoothie for suhoor- tasted like Ramadhaan in a glass
