Strawberry Muffins

Another strawberry recipe?  Seriously?  We get it you like strawberries! This is getting a little much don’t you think?

You wrong, I LOVE strawberries. They so pretty and juicy and yum… Sigh…  And besides this is a recipe for strawberry muffins. With chocolate. Enough said.

Yep, I’m sharing another recipe of this seasons favourite fruits with you! These are strawberry muffins that make a great breakfast-on-the-run type of snack and are also great for lunch boxes and afternoon teas. I have always had a love-love relationship with muffins. I love them in every type and form I also experimented a while back with savoury muffins. But I never seemed to get them just right- mine usually resemble cupcakes. A couple of months ago I found these funky muffin cases and decided to use them for the strawberry muffins.  I was very, very impressed with the way they came out. Give it a try:

 

Strawberry Chocolate Muffins

¼ cup sunflower oil

½ cup milk

1 large egg

Vanilla essence

½ tsp sea salt

2 tsp baking powder

½ cup caster sugar

1 ¾ cups cake flour

1 punnet chopped strawberries

1 slab milky bar chocolate roughly chopped (optional)

 

Preheat your oven to 180 degrees

Lightly whisk the oil, milk and egg.

Combine the flour, salt, sugar, baking powder.

Stir in the oil mixture and fold in the sliced strawbs (leave a few behind) and chocolate

Spoon into muffin cases press the remaining strawberries into the batter

Bake for about 25 min until golden brown and springy to the touch.

Perfect with a hot cup of masala chai

 

Variations and tips:


I decreased the amount of sugar to ¼ cup because of the addition of the chocolate

The strawberries can be replaced with 1 cup of apple, banana or berries of your choice

Add 1 tsp of cinnamon powder for some extra flavour
