Oh Crumpets!

Hello everyone,
Its Friday and that means the weekend is here! The best thing about weekends P.B (pre-baby) were just lying in bed and relaxing. My post-baby world means that I’m usually up at some obscene hour watching cartoons and in need of a serious sugar fix. What can be better than satiating those hunger pangs than crumpets and strawberries hmmmmmm!
I have been making this recipe since I was 12 and 12 years later it still makes me super excited to whip up a batch of these babies. For variation I decided to caramalize some strawbs an idea I got from Brownie Girl’s fanstastic blog. This recipe yields about 10-12 crumpets perfect for my little family of 3:

SoK’s Crumpets with Caramelized Strawberries:
1 large egg
1 cup cake flour
5 tsps sugar
2 tbl melted butter
pinch of salt
2 tsp baking powder
1/4 cup milk
Mix all the dry ingredients together
Combine the milk, egg and butter
Whisk into the dry ingredients until well combined and you have thick batter consistency (add little extra milk if the mixture is too thick
Drop spoonfuls of batter onto a hot non-stick pan and cook until golden brown
Keep warm
To prepare the strawberries:
Clean and chop 1 cup of strawberries
Heat 1/2 cup sugar with 1/2 tsp cinnamon until the sugar starts to melt
Add the strawberries and swirl until coated in the caramel
Spoon over the crumpets, drizzle with extra honey and a dollop of Greek yogurt
Serve

My baby could not wait and tucked in while I was taking pics!
