Wholewheat Vegetarian Pizzas

Hello Everbody,

Hope Monday has been going well thus far. I am sharing yet another lunchbox idea with you today. Its whole wheat vegetarian mini pizzas that also tie in nicely with meat-free Mondays J This can also be made in bulk and frozen- just defrost the night before and grill until the cheese melts.

These also make awesome (healthy) snacks for kids and adults and of course there is no compromise on taste!

WholeWheat Pizza Bases

2 cups nutty wheat flour (or whole wheat flour)

1 cup brown bread flour

1 cup white cake flour

¼ cup olive oil

1tbl sugar

1 tsp rock salt

1 packet instant yeast

Luke warm water

Combine all the dry ingredients.

Stir in the olive oil

Make the dough with some luke warm water

Place in an oiled bowl in a warm part of your kitchen till doubled in size

Punch down and roll into small round discs (just a little smaller than a saucer)

Poke with a fork and bake in a warm oven until just cooked 

Topping:

All Gold tomatoe sauce

Tomatoe concentrate (or tomato puree)

Combine and spread over pizzas.

Warm olive oil in a pan, toss in some:

Sliced onion

Fresh garlic

Peppers

Courgettes

Mushrooms

Sauté gently until the veggies are slightly cooked 

Season well with freshly chopped oregano and thyme, garlic salt and lemon pepper

Spoon over pizzas

Top with sliced tomatoes/Rosa tomatoes

Toss over some grated mozzarella

Grill until cheese melts and serve.
