Easy salmon steaks with a herb crust.

When I was in England last year one of my favourite pastimes was checking out their wonderful supermarkets. I love the variety they offer and the availability of fresh fish.
This was a prime example from Marks & Spencer, 3 for the price of 1, therefore you could feed six people fresh salmon for about R105.00! how reasonable is that?!
The other day I spotted some fresh salmon in our local Pick n Pay and decided to do this very easy recipe (my Mum gave it to me) for the two of us.
2 x 140g salmon steaks
2 TSP cream cheese
½ small clove of garlic
¼ lemon grated, rind only
60ml fresh breadcrumbs
30ml coarsely grated parmesan
1 TSP chopped fresh parsley + extra for garnish ( I also added some chopped garlic chives)
Season the fish.
Mash cream cheese with garlic and lemon rind.
Spread on top of the fish.
Mix breadcrumbs, parmesan and parsley.
Sprinkle on top of the cream cheese.
Dust with paprika.
Bake uncovered for 15 minutes @ 200 degrees.
Delicious served with a crisp salad & new potatoes, or even as a starter with some brown bread and butter.
