Biltong Dust Pate

15 December 2011 in Easy to prepare

This is definitely one for the guys, Himself gave it the thumbs up! Remember the Biltong Dust I got from my friendly butcher? I found this recipe lurking on various web sites and have adapted it slightly.

100g mushrooms chopped

1/2 small onion finely chopped

25g butter

50g biltong dust (or grated biltong)

125g cream cheese

100ml cream

garlic chives (optional)

a good grind of black pepper

In a frying pan, melt the butter and add the chopped onion and fry gently for a couple of minutes, when softened add the mushrooms and cook through. While this is cooking whip the cream lightly.

Using a food processor, put the mixture and all the other ingredients and buzz. I didn’t take it too fine as I wanted a chunky pate. If you don’t have a processor, just chop your mushrooms finer and mash everything with a fork.

Put in the fridge to firm.

Serve with Carr’s water biscuits or some crunchy bread. This made a good bowl full and would serve 4- 6 as a starter, depending on appetites.

    • Hi there, I went looking for you on LD and couldn’t find you! You obviously haven’t posted lately and the search thingy wouldn’t work! I was wondering how you were and how the job was going? I like the idea of making sweet spring rolls.

      • Not enjoying the place I work at much, so have decided if I still feel the same by March I’m going to quit and go back to working for myself. Had enough of being micro-managed and dictated to. I’m not enjoying this wordpress place much. Seems quite difficult to negotiate.
Sue, where would I find your tuna ‘quiche’ that uses baconkips for the ‘pastry’ please. I remember the recipe and now I’m really hankering to make it.
