One Bean Salad

I’m not enjoying the new American Masterchef, or should we just call it The Gordon Ramsey Show? What a disappointment, non of the finesse of the Australian series, no master classes, no humour, constant *#@*ing bleeps!…..bring back Gary George and Matt! I will watch this series to the end but I won’t bother with it in the future.
I’m still on a mission to cut down on calories and this is a healthier take on the ubiquitous 3 bean salad. Firstly it uses fresh green beans, the baked and butter beans have been ditched and I have replaced the sugar in the dressing with Natreen Diet Liquid Sweetener. This is a method, rather than an exact recipe as it depends on how many people you want to serve.
Green beans – topped, tailed and sliced
Onion – sliced
Green pepper – sliced
Toasted nuts (I used almonds but you can use any nut)
Equal parts of vinegar & sugar (or Natreen Diet Liquid Sweetner as I did, they give measurement instructions on the box)
Salt & pepper
Boil the beans, onions and pepper for about 5 – 10 minutes (I like the beans to be crisp).
Mix the vinegar, sugar and seasoning and pour over the beans whilst still warm.
Chill in the fridge before serving, scatter with toasted nuts.

I made the mistake of reading this BEFORE lunch! We are also cutting down on calories. The Gordon Ramsay show is similar to his Kitchen Hell series xxx

Not having DSTV, I’m sadly not in a position to compare the different Masterchef series, much as I’d love to!
This looks really great! I love green beans, cooked but still crunchy and, as I’m also battling with unwelcome weight gain right now, this recipe is right up my street!!

Blondie, consider yourself lucky to have missed this series! You need to get some of the Diet Sweetener, Dis-Chem have it. A little goes a long way.

This look so good, i am also on the “cutting calories” diet. I totally agree about Masterchef USA–do not enjoy it at all.

I don’t like almonds, but reckon walnuts could be an okay substitute. Really not loving the USA Masterchef. I miss the masterclasses and the good advice that Oz had.

Must admit I kind of fancy the Italian dude on Master chef…think he is uber classy and has a strange sex appeal about him(shock horror,admitting this on my 22nd wedding anniversary!)
Not wild about beans or nuts so don’t think this is a recipe for me…sorry,looks nice though

Those beans look very edible indeed. Cutting down on calories sounds like a great idea, but not sure if I’ll give it a lot of thought.

Lovely bean salad. Can you believe that green beans have a texture that I cannot chew at the moment and I do so love and miss them in my diet
I have not watched the USA Masterchef and am somehow glad that I didn’t start. I just knew it would be very different!! xx
