Quick and Easy Honey Mustard Chicken
9 May 2012 in Cheap and cheerful, Easy to prepare, Uncategorized
I have dutifully watched Master Chef South Africa in the abject hope that it would come right after a few episodes. Sadly I am still underwhelmed, it’s a pity they didn’t have some of our talented Food24 bloggers in there, they would have knocked spots off most of those contestants! Chef Andrew takes over-acting to a whole new level and ag sies tog* his mommy dresses him funny!
I had no intention of posting this dish, hence no prep pics but it turned out so nicely. If the chicken breasts are large I tend to cut them in half, I’m not a big eater, more of a little & often grazer, which means I always have leftovers for lunch the next day.
Oranges are in season so do try and use fresh orange juice in this easy-peasy recipe.
2 chicken breasts on the bone, skin removed
1 small onion sliced thickly
250mls fresh orange juice
1 inch sized knob of ginger grated
2 TBSP old brown sherry
1 TBS honey
1 tsp wholegrain mustard (this cuts the sweetness without making the dish burny, so it’s ok for kids)
1 TBSP raisins or sultanas (optional)
1 TBSP cornflour
Seasoning to taste
Heat your oven to 180c
Place the breasts and the onion slices in an ovenproof dish that has a lid.
Whisk together the remaining ingredients adding the cornflour last, and pour over the chicken.
Bake for 30 minutes, remove the lid and bake for another 15 minutes to colour.
If the sauce is too thick add a little more juice.
* Ag sies tog is Afrikaans for poor thing/ jeepers/ shame/ expression of sympathy

That really does look good. I shall try some arm-twisting in the culinary department of the household …
(Hey, I do battle with the jungle, so I have my uses.)
Sadly SA seems to muck up these TV franchises rather horribly. The chef scene is yet another example.

Our MasterChef pales in comparison to the Australian series sadly. I’m sure MBH will like this recipe as it is simple and quick.

Well, first off let me say that Andrew has put me off watching the show altogether. I understand they all gets “scripts” but he makes it quite embarrassing being South African!
Mandy
More importantly what a scrumptious chicken dish!

I so agree with you, I suppose we have to remember they are chefs and not actors, but the Aussie chefs did so much better.

Why didn’t they rather choose Chef Reuben Riffel and Chef Stephen Bllingham to host with Chef Benny. My nephew trained under Stephen Billingham and is now a chef at a 5 Star boutique hotel in Jozi and he only qualified 2 years ago!! Anyway, on the subject of food, this recipe works well with my Weight Watchers programme so I will give it a try. Ummmm can’t wait..
Sous Chef said on 11 May 2012
How handy having a chef in the family! Interesting that this works for your weight watchers, even with the sherry, honey and the flour?
Jill Mileham said on 11 May 2012
Yes it is handy haveing the Chef in the home, but he doesn’t always cook for us (only when his Mom comes to visit). As far as the recipe being okay for Weight Watchers, we can allocate points towards whatever we use in food , so I build it into the points value for that day and some of the items have O points.

Sounds like a good diet, I did WeighLess years ago and hated every minute.

I think the Masterchef series is starting to settle in, they have improved over the last 2 shows. Andrew is a bit of a pain, but perhaps he doesnt realise he is trying too hard….someone should tell him. The chickent dish looks fantastic.
Sous Chef said on 10 May 2012
Hi Gill, thanks for popping in! You are right, someone should tell him cos I’m pretty sure he doesn’t read my blog!
