Economical Chocolate Bread Pudding -feeds 6 for under R15.00

I was recently given this recipe (thanks Dominque) and incorrectly assumed that it would be your usual bread-and-butter-type pudding, how wrong was I?! This is a great pud for the family it uses everyday ingredients that we all have in our cupboards and it is both economical and easy to make, it ticks all the boxes.
Chocolate Bread Pudding
500mls of milk
6 slices of bread cubed
125ml sugar
85ml cocoa
2 egg yolks, lightly beaten
30ml softened butter
5ml vanilla
2 egg whites, beaten to stiff peaks

Preheat your oven to 180 degrees and grease a 20cm (8 inch) square dish
Put the milk into a saucepan and bring to the boil, remove from heat
Add the bread cubes and whisk until quite smooth (I used my mixer)
Add sugar, cocoa and yolks, mix well
Add butter and vanilla
Fold in the egg whites
Pour into your dish
Place inside a bigger dish with boiling water, the water needs to come about halfway up the smaller dish
Bake for 30 minutes or until firm
Serve with custard, cream or ice cream

I would think that brown bread would actually blend in easier than white, do let me know if you try it Mandy.

Looks good, and I wouldn’t knock the conventional Bread and Butter Pud either. It can be a real work of art. Those at Blu Pumpkin are divine!

Psst! I don’t enjoy cooking or baking (I’d rather wash that mountain of dishes) but for this one, I’ll definitely put on my apron and pretend to be the Cake Boss’ pastry chef.
It’s strange though that for someone who loves watching foodie shows/programs, collects cookery books, subscribes to tons of newsletters like Food24, etc, to never, I mean never, try out the recipes. Mh.
This is going to be a first. Of many, I hope!

I laboured for a good 90 minutes making an old-fashined baked chocolate pudding last night. I used more than a cup of cocoa in the recipe! It seemed like a huge waste… and it turned out rather ‘blah’ in the end. Will definitely give this one a try next time.

OMW it is delicious…It’s raining so I decided to bake!! I made it with some french milk bread rolls!! It is light, fluffy and definitely worth it!!
