Tagliatelle with Carbonara Sauce

I have not done the groceries as yet so this is my store cuboard standyby. Trust the Italians to turn bacon and eggs into something magical!


You'll need:

5 rashers streaky bacon chopped
2 egg yolks
3 tablespoons double cream
a good handful parmesan
200 grams tagliatelle

METHOD:
Fry the bacon until crispy
Boil the tagliatelle.
Mix the egg yolks, cream and the parmesan together.
Once the pasta is cooked drain and reserve some of the cooking liquid.
Pour the pasta over the bacon bits and quickly add the egg mixture. The residual heat from the pasta will cook the eggs. Add some of the reserved cooking liquid to make a fluid sauce. Season with black pepper.
