Or, in simpler terms – an honest-to-goodness potato curry! Perfect for lazy weekend meals or just any day when you want something slightly more low-maintenance. You just fry the onions, chop the potatoes and then allow it to simmer for 10 minutes before stirring in your tomatoes. Add the peas just before serving and you’ve got a virtually hands-free meal.

Oh, and this is also perfect for Cape Town’s new Meatless Day initiative!

I love chocolate. I adore cheese. So what better way to enjoy the best of both worlds than with these Dark Chocolate Camembert Truffles?
Your initial thought is probably “huh?”, but these truffles will win you over with their velvety richness, smooth texture and exquisite taste. So if you’re brave why not have a go at making them? This Miso Grilled Chicken Salad is perfect for the spring-ish weather in the Winelands at the moment. I love the transition between seasons as you get to have the best of both worlds, and at the moment it’s looking decidedly summery!

Baked Oatmeal

Hands up if your mom also couldn’t churn out crunchies fast enough for you to gobble it all up as a kid. Crunchies was my mom’s stock standard cookie offering – low effort, low cost and the recipe she had made about a billion cookies, so she wouldn’t have to bake again for quite some time. My mom, bless her, would rather whip up a new skirt (she’s a super seamstress, takes after her dad), than spend her afternoons baking or cooking up a storm as I like to.

But I think my mom would approve of this cinnamon baked oatmeal. It delivers on taste (tastes rather like crunchies actually!), and although you have to let it soak overnight and bake 40 minutes the next morning, the hands on time is about 5 minutes. Leaving you with plenty of time to slowly awaken and get ready for the day amidst the heavenly fragrance wafting from the kitchen.

Another Ethiopian meal, but unlike the last vegan one, this Beef in Greenpepper Sauce is full on carnivorous! I have really fallen in love with Ethiopian flavours after a wonderful meal at Addis in Cape Town – if you have not visited them you are really missing out. Now if only I could master injera (the sour, spongey pancake-like bread used to scoop up the food) – if any of you have a recipe for this, please let me know!

Happy birthday to me, happy birthday to meee, happy birthday dear Marisaaaaaaa, happy biiiirthday to me! I decided to take a day off work on Wednesday (it’s criminal to work on your birthday don’t you think?) and spend the day  surfing the web and baking cupcakes.
And is there any better way to spend the day than baking (and eating!) these biscuity-crunchy, choc-chip-fudgy Mississippi Mud cupcakes?

 Thai Inspired Zucchini & Waterblommetjie Soup is my entry into Nina’s My Easy Cooking Challenge #1 – Thai. This is a satisfying winter soup, but with a fresh zinginess that hints at the coming summer. If you don’t have any waterblommetjies on hand, don’t fret, just replace with an equal volume of other green veggies of your choice (I think broccoli would work particularly well here).
And if you haven’t entered in Nina’s challenge – what are you waiting for? You have until the the end of the month to come up with a mouthwatering Thai or Thai inspired recipe and you could win a meal at Wang Thai. NICE!

Ethiopian Lentil Stew

This lentil stew seems plain and (dare I say it?) boring at first sight, but as always, the added spices work their magic. This is somewhat similar to that stalwart of Indian cooking – dhal – yet decidedly different. The flavour is more subtle and if you’re a bit shy to try exotic foods, this is a perfect gateway dish. Also, if you haven’t tried Ethiopian food before, I strongly encourage you to give it a go. I think you’ll find yourself pleasantly surprised.
