Scone Roll

Friday night was braai night – we had a perfect steak and a foil pack of mixed vegetables roasted on the fire, just delicious! but as only AP and I were home for the Friday night braai, (NJ having scarpered off to Durbs-by-the-sea to stay with her sister), there was steak and roasted veggies left over a-plenty. So for lunch on Saturday, I made one of my favourite left-over dishes – a Scone Roll.

My scone recipe is the one I got from my mother, which is pretty basic, but I have changed it to use self-raising flour instead of flour-plus-baking-powder, and I prefer the results – no baking powder flavour! Here’s the recipe, and the method for a scone roll.
Plain Scones
2 cups of self-raising flour
3 mls salt
60 grs butter
1 egg, lightly beaten, and enough milk to make 150 mls
extra milk, if needed

Mix the dry ingredients in the processor bowl

Add the butter and pulse to cut it into the flour, to breadcrumb consistency

Leave the processor running, pour in the milk and egg, mixing quickly. Switch off as soon as the dough binds together

Turn out onto a floured surface and roll out thinly

For the filling, I chopped a small onion finely, fried it in a little butter, added the diced braaied steak, and the roasted veggies. After checking the seasonings, this was set aside to cool. You can use any left-overs you may have, or make a mixture using bacon, onion and tomatoes, etc. (NB: make sure your filling has a lot of sauce – left-over gravy, or lots of tomatoes, or a white sauce, or even a dollop of Nando’s Garlic Sauce. Be creative!!)

Spread the scone dough with the filling, and roll up like a chunky Swiss Roll or roulade

Place on a greased baking tray and curve the ends towards each other

Slash the roll a few times, and bake at 200°C for 15-20 minutes, until golden brown and cooked through.

We ate ours just like that, but it’s delicious with a salad, and even cold, it’s good too. Enjoy!!

Im good thanks! I do apologise for being quiet, between getting a new harddrive and moving offices – havent had a lot of time to blog (and I try to stay away from Pc’s in the evening and weekends…)

Looks delicious. The test of good pies or sausage rolls, to my mind, is whether they are good to eat cold. The inferior ones are yucky if not heated.

That’s very true, I think it has to do with the quality of fat used – real butter always tastes good!
